I served this recipe for green bean casserole at Thanksgiving this year. I wanted a more modern (and healthy take on the traditional and that is exactly what I got. Everyone loved it and I sent the recipe to several people. I think this dish also makes a great side for everyday meals. Marvelous!

The green beans were pretty good but what made it special were the Onion Rings. I didn't have anything to grind the Arborio Rice but luckily I had this "Brown Rice Cream" by Erewhon (found at health food stores - that turned out to be finely ground brown rice. And it worked perfectly! These onion rings had this heavenly crisp I've never had before. This dish was devoured in seconds. This recipe makes a lot of coating but I bet this stuff would also make a great Fried Chicken.

This was a huge hit at Thanksgiving. It tasted even better the 2nd day, so next year I will make it a day in advanced. I wanted to keep this dish non-dairy so I used the pre-made fried onions in the can from Trader Joes along with some fried Shallots.

Don't microwave this!! Sparks will fly.

I made these recipe for Thanksgiving instead of the original green bean casserole. I did double the green beans and I just used the french's onion rings instead of makeing my own. But everyone loved it. I will definately make it again.

I like the idea of the combined thyme and Cognac added to this recipe. It will add a touch of different flavors to the green bean. Much different than most recipes.
