    Great base recipe! I put a southwestern twist on it. I put black bean hummus on one bun and smash avocado w/ green chile pesto on the other.

    Super simple but SOOOOO good. We've been trying to cut back on our meat consumption and this is the kind of recipe that does not make you miss it at all. The only addition I made was to top the sandwich with baby spinach dressed in balsamic vinaigrette (Newman's Own is my fave. I'm sure dressed lettuce would be good too.

    I am out of gas for my bbq so I had to fry this up in a skillet. It was wonderful. I bet the grill is even better. I will be making this very regularly!!!

    I made these for some vegetarian guests and they loved them. So did people that aren't vegetarian. Very easy to make on a grill or in a grill pan.

    We substituted a little crumbled gorgonzola for the feta cheese, and it was so perfect and delicious! I'm sure that it would be wonderful with feta also. What a fantastic result for such a quick and easy dish. I'll serve this the next time my vegetarian friends come to visit!
