    This was the first time I tried Brie cheese but it was very tasty. Reminded me of cream cheese. The sandwhich was good especially with the roasted red peppers. Didn't really care for the dijon on the sandwich though.

    i used brie as well as provolone and this was just delicious! a big hit. perfect w/ tomato soup :D

    ...but I do have TWO cast-iron pans. When prepping, I used 2 burners to heat up both iron pans concurrently to just under the smoke point.

    When frying, I placed the hot 2nd pan on top (doing the squishing action and it cooked quick! 1.5 - 2.0 mins per side. It does squash pretty flat, from 2 inches to 0.5, but the Italian bread comes out tasting much better than it looks: good and crunchy.

    Not finding Teleme, I too used Brie which is warm and delicious, plus I will have to agree that a good part of the brilliance of this recipe is the roasted red-peppers, more so than choice of meat. Actually, I wouldn't think twice about leaving the meat out for your veggie pals.

    This is definately a keeper, for better or worse, it'll cause me to keep a stock Brie. :-

    This sandwich is so easy to make! Yes, it is definitely a "Grown Up Grilled Cheese Sandwich" that should be served to those who are willing to savor the melding of tastes and contrasts of texture and temperature.

    This sandwich was made with only three thin slices of ham on the show, not one pound which does seem excessive to me. I also don't understand a recipe that recommends a type of cheese that very few viewers can access.

    This sandwich overall was fantastic, and the roasted peppers were fabulous. However, the cheese tasted strange. We had never had Brie cheese before, and it had a strange aftertaste. Maybe it is an acquired taste. I will definitely make this recipe again with a more familiar type of cheese.

    This was a great tasting, easy to make sandwich. I found individual ciabatta rolls which fit nicely on my little george forman grill. I also used provolone cheese and black forest ham. The roasted red peppers made the sandwich. I will definitely make this again and try out different combinations of meats, cheeses, and breads.

    Could not find Teleme cheese, but Brie was just as good. Even Whole Foods didn't have Teleme. It was like eating a panini kind of. I would make this again when I'm looking for something different to make for friends as an appetizer.
