My family loved this soup. I used draught style guiness as some others suggested and it wasn't bitter. My 16 year old even liked it. I love French onion soup, but don't like the over saltiness that many restaurant soups have. This was very flavorful and not oversalty. The thyme gave it a really nice flavor.
I did intend on using sherry vinegar, but in my haste I accidentally left it out. I didn't realize I had left it out until we already started eating. It was good anyway. I will definitely make it again.

We made this last night as a fun St. Patrick's Day variation on onion soup. As others had mentioned the bitter taste, we did use Draught style Guiness and thought it tasted fine. For me, the bitter aftertaste that I experienced came from the sherry vinegar, which I even used in a slightly reduced amount. The vinegar taste stayed with me long after I ate the soup. So if I did this a second time, I think I would leave out the vinegar.
We did use Irish Cheddar which was a wonderful variation. Overall, I would probably make this again, but it wouldn't replace my regular French Onion Soup.

I have used Guinness in other recipes but never the regular style. Based on reviews here I will use the Draught version again for this recipe. The regular style Guinness imparts the bitter flavor. The Draught version is a tad more expensive but definitely worth it (try using this one in the Guinness stew recipe as well...very rich full flavor

Like another reviewer said, it's a great recipe if you like Guinness. It's an easy recipe but the beer gives it a bitter after taste, which is not what I expected. I have had Guinness onion soup in restaurants before and I loved it because it tasted so much richer than other onion soup I had. I have faith in the idea of putting Guinness in onion soup but I will probably reduce the amount of beer next time, perhaps putting just 1/2 or 1/3 of the recommended amount. If you feel the same way I do, don't give up! Keep experimenting because it's worth it!

Good soup, but not excellent. If you want an onion soup I'd say stick with your basic french onion recipe.

I GUESS YOU REALLY HAVE TO LIKE GUINNESS TO LIKE THIS. STRANGE TASTE, AS WELL AS VERY SWEET. OBVIOUSLY WILL NOT MAKE AGAIN.

It was easy to make. My parents loved it, my husband hates onions and he still enjoyed it. Had to sub w/regular sharp chedder. Next time I'll make sure I get the Irish chedder. I used yellow onions, but I do wonder what other onion would be even better?

This soup was awesome. It has a nice flavor and is much less salty than French onion soups that I've made. The cheese is easier to eat than mozzarella is too, which was an added bonus. I cut up too many onions and threw them in anyway. As for browning that others spoke of, make sure the oil is hot enough and cook them at a higher temp.
