    I gave it 4 stars because I had to jazz it up a bit to be great. I added about 1-2 tablespoons of catsup (it tasted bland before and about 1/8 tsp of beau monde. What I really liked about it it that it wasn't salty like some onion soups. Also, I didn't have sherry vinegar wine so I substituted red wine vinegar. I also let it simmer awhile but I definitely make it again.

    Come on you guys. It's carmelizing onions - not splitting the atom. Remember to use HIGH heat and make them in two batches if your stove doesn't have a burner that is REALLY hot. My old stove would turn large batches of vegetables into a braise instead of a saute. I have a new stove with a super hot burner. Bitterness comes from the Guiness so if it's not to your liking, just add a pinch of sugar.

    I couldnt get the onions to brown and substituted the sherry vinegar with "Woodbridge" Chardonnay. This is not a quick soup to make so make sure you have time. This is a very good soup and will make it again as my family is a French soup fan!

    At press time, I am working on a painting because the onions still haven't browned! They've been simmering for almost an hour. Followed the directions exactly, but this hasn't exactly been a "fast" soup to make. Anyone suggest a fast-browning onion?

    I think that this recipe can be tinkered with to make it better, but the sherry vinegar was an overpowering flavor. Be sure to cook the onions thoroughly.

    This looked so good when he made it. I used the exact recipe and it was so biiter and not good. I think the amount of onion suggested is too much. Also, maybe cut the amount og Guinness.
