Very good! I would use a little less thyme leaves next time. They were a little over powering. Great onion soup and easy to make!

Overall the soup is good enough to eat, but for my taste the Guinness was too bitter. It took away from the beef broth and onions. I suggest using a beer of your choice, but still keeping it a dark beer. I rarely drink Guinness.

This is the best onion soup. It doesn't taste like onions and stock. It has a real distinctive flavor. I served it at a luncheon in my home. Rave reviews.

I made this soup for my husband - a big Guiness fan. He loved it. I did use a rye bread and swiss cheese substitute - but other than that followed exact recipe. He said it was definitely a keeper!
