When I saw how much onion and red pepper I had to add to the meat mixture, I halved the amount of onion and reduced the red pepper by a third and only used 1/2 cup of bread crumbs. The meat loaf turned out very good, There would have been too many vegetables in proportion to meat if made per the recipe, in my opinion.

Did it step by step, just had to cook it longer. Used an intern thermo which read 160, the center was still moist &/or pink.
Taste incredible the next day. Should be called the "Next Day Italian Meatloaf"

I used quiet a bit of substitutes for this but being that it's meatloaf, I didn't think much could go wrong. It might as well be a new recipe of its own but credit goes to the original recipe. Substitutes were ground pork, fresh chopped basil leaves, white vinegar, shallots, a little bit of thyme, 1/4c parmesean (that's all I had on hand, diced green bell peppers and jar of sweet basil pasta sauce. I ended up eating it with hamburger buns. I was worried about the substitutes but as a student, I'm still on a budget so used whatever I had on hand. I like this recipe b/c it really is versitile and simple to put together.

This recipe is a winner! I made it for my family, after eating turkey, ham, etc. over the holidays.
I only have one piece left~ everyone complemented the taste, flavor and moistness of the meatloaf.
One Italian friend mentioned that it would be perfect for a dinner party! Fabulous comfort food.
I made my own bread crumbs from day-old hard rolls and the chopped parsley and basil are a must.
Thanks for this great recipe!

All my fam and friends love this meatloaf... even my brother who isn't a fan of meatloaf loves it. Very easy to make. I totally recommend it!

This is really amazing meatloaf. So moist and so much flavor. I will never make a traditional brown sugar and ketchup meafloaf again after making meatloaf like this. This one is a real winner!

I made this after seeing the show and it instantly became a favorite in our house and for many of our friends who have tried it. I make my own 'frozen dinners' so my family can take them for lunches. This meatloaf reheats well for these meals.
