I don't know if it is the cheese or just the combination of flavors but this is devine. Serve with smashed potatoes and you will be in heaven.

I've made many a meatloaf and boy does this one stand out; I added a touch of ketchup to the bowl and a handful of raisins but even without those I think you'd enjoy this simple to make dish.

This meatloaf was fantastic, how could it not be with that much cheese in it? I made it free form instead of in a pan because thinking of meatloaf simmering in its fat grosses me out. I made one giant loaf on a cookie sheet and it was fabulous.

The fresh basil and red pepper made this meatloaf different and special. Very tasty and have replaced my old meatloaf recipe with this one.

I, too, thought 1lb of meat was going to be too little - I used 1.3lbs and it turned out AMAZING! The onions and peppers really "plump" it up - this was a big meatloaf! :

Try this recipe! even if you aren't a meatloaf fan - which I wasn't until I took a chance and tried this recipe! My teenage son ate over half the casserole! even somthing I'd consider serving to company!
good idea to mix all other ingrediants first and then add the meat last - bake as directed - and be prepared to be take a bow! an easy winner!!!!
