I made this last Sunday and making it again tonight, only 3 days later; my kids loved it that much! I brined my tenderloin in apple juice, soy sauce, and honey for 1 or 2 hours before I baked it. I served it with classic risotto & deglazed the pan with white wine to make a sauce since I didn't make the applesauce.
Using a thermometer that you can easily read from outside the oven helps because its temperature goes up very quickly at the very end.

I served this to three college boys and they said it was the best meal they had had all year. Amazing flavor and so tender.

I LOVE THAT MICHAEL COOKS ON TOP OF THE STOVE & FINISHES IN THE OVEN - A LITTLE UTILIZED METHOD THAT WORKS WELL, & ALSO MADE FOR SOME WONDERFUL AU JUS. THE TIMING WAS PERFECT & THE COMBINATION OF SWEET/SAVORY WAS DELICIOUS. THE HONEY WAS A NICE CHANGE FROM SUGAR. VERY ELEGANT FOR GUESTS.

It might have made a difference that we did not use a zester for the lemons but I thought it was very lemony and that the lemon marinade didn't really go with the pork tenderloin. I thought this dish was OK-I would eat it again but not my first choice.

I don't eat pork so I stole the apple sauce recipe and it was delicious. Perfect for the menu my boyfriend and I put together, cooked and enjoyed on a frigid Chicago night.
