    I'm not allowed to make baked poatoes any other way. I've been using speck instead of prosciutto EVEN BETTER!!! Def try this with speck if its available in your area.

    I made these for an appetizer party. They were really time consuming to make otherwise I would've given 5 stars. The filling was my favorite! I made it just so.. they were a hit...easy bite size yumminess! Would I make them again? Yes, if I have the time. I think they would be just as fab with bacon too! ;

    I have made these before and they were fabulous! I did opt for the cream Frache instead as I had the ingredients! I am making these tonight and I WILL use the Mascarpone! Shame on me, I know better than to deviate from the original recipe as least for the first time! Could they be any better? We shall see!

    If you make these, USE the mascarpone! It ends up tasting like the best combo ever of sour cream and butter. And then with the prosciutto - YUM!!! We have made these a number of times for our "wine dinners" that we host. Everyone loves them and requests them. Fabulous recipe!

    I hosted a small tapas party at home and thought these would be a nice dish to serve my friends... and they loved it! The baked potatoes were perfect sizes and very delicious. I definitely plan on making these for another get-together, but maybe try other variations. I think they are the simplest bites to make with a fancy appeal.

    Instead of the mascarpone cheese and prosciutto, I used sour cream (mascarpone was pricey and bacon (I needed bacon for a stuffed dates recipe. One change I will make is increasing the baking time to ensure that all the potatoes cooked evenly.

    Made these baked potatoes, used a medium size, followed directions for baking on salt. I added the prosciutto bites in the potatoe first, than added the mascarpone, topped with chives. YUMMY-OOOOOO
