    The skin of the eggplant turned out to be quite chewy. Also, the cheese is not very flavorful. I prefer one that has a stronger taste. I have leftover stuffings so I grabbed a tomato and halved a pepper from the fridge. This is a break from my traditional stuffed veggies which I use rice. Overall it's good, will make it again.

    I made this dish tonight and my family raved about it. It's so easy and simple but turns out so flavorful, colorful, and has great texture and taste. No changes to reccomend, it was great as is.

    This is such a great dish, even if you switch the beef with turkey meat it still tastes wonderful!

    This receipe sounded very good, although my husband initially didn't think so. After I made it and he tasted it, he loved it! He even said it was good enough for company. This is a "keeper." Although there is some chopping, this is easy to make. I even sauteed all the veggies in the same pan after I browned and drained the hamburger meat.

    This was so easy and so delicious! My husband has always refused eggplant, but couldn't resist the wonderful smell when preparing this recipe. He LOVED it! Can't wait to prepare this for company.
