As I am typing this review, I can smell all of the herbs, garlice, and veggies wafting through my house. Mmmm...
I had a bonus from this recipe as well! I used some rice, as suggested by another reviewer, which left me with a bit extra stuffing. Since the red pepper was so large, I only used half. The extra stuffing went into the other half of the pepper and, voila!
This recipe is definitely a keeper.

I loved this recipe, but as a busy mom, I look for ways to streamline the process. Not sure why we had to fry the veggies seperately, so I did it all in one pan with the inside of the eggplant, the meat, and veggies. I followed the rest of the steps...it cut out a lot of time, and was delicious! Will do again.

This was absolutely delicious! The only thing I did differently was use 2 cut up meatballs (i had them leftover and didn't feel like defrosting beef, instead of the 1/2lb beef. Really nice taste and texture.Didn't think it was bland at all, the romano gave it a nice salty bold taste. I normally hate eggplant skin because it can be tough, but in this recipe it was perfect! Definitely a keeper recipe!

This is my new favorite recipe---thanks Mom! It's quick, easy and I have everything on hand. I use ground turkey, never measure anything and it still comes out great.

I didn't watch the actual show but pulled up the recipe. The recipe does not tell you what to do with the scooped out eggplant. Without seeing the show, how do you boil the inside. Do you put it in water? How much? and then what??????????????? I bet the recipe would be great if I knew what I was actually doing.

Wonderful. The only changes I made was to use extra garlic and ground turkey. Somewhat time consuming but worth it.

Absolutely DELICOUS! I had only ever eaten eggplant once before and had convinced myself all these years that it was "gross!" Well, I'm here to tell you, this man can COOK and he knows what to put with what as far as flavors go. The eggplant itself was alright, but the meat mixture was absolutely devine! I will make this again and again it was so good! Thanks, Michael!

My husband is a finiky eater and I was skeptical about preparing this recipe - he likes eggplant prepared certain ways - tongue in cheek I went for it! Mikey

I made this the other night for my husband and I. It was delicious. I couldn't wait for the next night so I could eat the left overs. I will definitely make again!
