This was the best turkey soup I ever made! A warning, however -- the recipe does not specify whether to cover the pot while the broth is simmering for 1 1/2 hrs. I simmered with the lid off, and it reduced so much that I had to add quite a bit more broth and water to make it soupy enough --- so keep your lid on, or at least partially! I added a sprig of thyme to the broth. I cut up 2 raw sweet potatoes into 3/4" cubes and sauteed it with the onion, carrot and celery. I added a little of my leftover Silver Palate Grand Marnier stuffing and some onion balsamic gravy. I added uncooked green beans near the end, which cooked quickly. Absolutely delish!

Wow! This one you have to try! Everybody I served it to, scarfed it up and wanted seconds. This is one I would make a point to make a few times a year and not just after Thanksgiving to get use out of the leftovers.

This is awesome. I sometimes use canned mixed veggies in case I don't have enough leftovers and it works well. We never have leftovers.

The soup came out very good, I did make some changes instead of broth I used a chicken base and the juices from the turkey pan. My family loved the taste as did I!

I have prepared this soup every Thanksgiving for four years. I double the recipe and its gone in two days. My family does not like brussel sprouts so I steam diced cabbage instead. Excellent recipe.

I think this soup is very delicious and a great way to use your leftovers. I used leftover mashed potatoes instead of the sweet potatoes and they were wonderful. The soup was even better a couple of days later.

My husband said "This is THE BEST clear broth soup I've ever had! The seasoning is perfect". That was said after he had three huge bowls of it!.....'nuff said!

Excellent recipe! I used green beans, corn and sweet potatos (all uncooked and threw in a sprig of thyme. Everything else was done per the recipe. Can't wait to make again next thanksgiving!
