A very nice recipe. My 2 year old over stuffed herself on it -- and so did I. I used turkey stock made from the carcass left over from Thanksgiving. I didn't have sweet potatoes, but made a small "dumpling" out of leftover spicy mashed sweet potato added to the bowl-- but the soup stands on its own. In addition to the dark meat scraps, I used a lot of carrots and added corn and peas. Also added some brown rice for some substance -- it turned out fantastic. Fresh sage and fresh bay makes an enormous difference in taste. Dried herbs tend to be "heavier," fresh herbs on the other hand "lighten" and brighten.

This recipe was so yummy and delicious... I found this recipe to be very easy and everyone loved it.... I doubled the ingreidents. I could not find fresh sage, however, I used ground sage instead and added some corn, a shallot, peas, and about a 1/2 a cup of leftover stuffing...delicious!! Thank you so much for this recipe! :

After working with this recipe for three hours, first of all, not reading the directions and taking off on my own tangent, I came back to it and was able to save it. In all fairness, I used this as a base for my stock, then took this recipe and the recipe another reviewer was mentioning about stuffing dumplings (yum yum, mixed the two, and wow, it was wonderful. I also added the mashed potatoes. Love it. Definetely learned a serious lesson for next year, READ THE DIRECTIONS.

I don't see how it's fair to rate this recipe, as I played with the seasonings and veggies a bit. First off, this recipe is a GREAT jumping off point. Not only does the basic recipe taste great, but it's also easy!!! Since we didn't do Thanksgiving at home, we brought the carcas home with us from our host's house (they offered. I added froze corn kernels, frozen green beans, two potatoes, two sweet potatoes, a half stick of butter, and some cayenne. The soup turned out great! IT's tasty, full of flavor, and slightly sweet (as a previous rater noted. I added the potatoes at the wrong time so they're really soft, but I don't mind. I'm going to play with this recipe. Maybe I'll take some inspiration from Aarti or Bobby next time. I'm thinkin sour cream would be delicious!!!

Excellent! I even added some leftover turkey gravy and potatoes. It tasted like Thanksgiving all over again. The kids loved the soup. Will make again!

I'm not ashamed to say that there have been a few times when we've had turkey *just* so I could make this soup. It's that good. My husband begs me to make it, and we talk about it all year long. Never add the mashed potatoes because my husband is strictly low carb and it's still sooooo good.

Adding the mashed potatoes to the broth is awesome! Food network also had a great recipe where you add eggs to leftover stuffing to make dumplings...drop stuffing balls into simmering soup and you have yummy leftover dumpling soup...big hit with the children :
