I'm not the "cook" in my household, but decided to try these one night for a side with dinner that I was making. I had overcooked them a bit during the boiling phase, but didn't worry about it. It did take longer to bake them than I thought. That didn't matter either because everyone loved them! I've made them several times since (and have factored in the extended cooking time and each time I make them a bit different. I change up the seasoning to go with the main course. They are so good with a little cheyenne pepper and some garlic and herb seasoning! Have fun with these and put whatever seasoning on them you want. I'm learning that you don't have to follow a recipe to a T for it to taste good.

Wow!...what an excellent fry recipe this is....my family LOVED these with dinner tonight! I boiled my potatoes for 5 minutes and then tossed them with garlic sea salt and rainbow cracked peppercorns and the olive oil. Then I put them on a sprayed cookie sheet and baked them at 450 for 23 minutes....I sprinkled then liberally with fresh parmesan and broiled then for 3 minutes. They were so golden and YUMMY! Awesome recipe that I will make again and again. These disappeared so quickly and my teens where asking for more...lol...so, the only thing I can suggest is to double this recipe right off the bat!

The first time I made this recipe, as other reviewers had, I boiled the potatoes to long and they were falling apart in the oven prior to browning. I put them under the broiler and browned them. The second time was the winner, I only boiled them on a low boil (as directed around 4 minutes. I baked the potatoes in a pre-heated convection oven at 400 degrees. I do not time things when I cook but within 15 minutes I flipped the potatoes over as the bottoms were browned. Unfortunately they browned really fast on the flip side and I burned some of them. This probably would not have happened if I would have cut my potatoes the same size. The ones I did not burn were excellent and I will make this again but maybe use the convection oven at a lower temp or watch the clock/oven.
As another reviewer stated the type of potatoe you use makes a difference and the russetts worked perfect for me. Even though all ovens are little different I would cook at a higher temp than called for. The convection speeded up the process and they were done baking in about 20 - 25 minutes. This recipe has recieved some bad reviews but it really could be the direct cause of user error.

These fries were tasty and beautiful! I read the reviews and cooked the fries at 450 instead of 400. Also, like others, I found that they still needed a bit longer to cook. Amazing!

This recipe is a great alternative to our usual roasted red potatoes and to traditional french fries. Great flavor, fresh ingredients and although it's a few steps, easy to make. Everyone at the table will be looking for seconds.

I used red potatoes and simply put them in the microware in a large bowl to cook till partially done. Drained them and cooked them in the oven and they were FAB!! Will definately be using this recipe again!!

I was so excited to try a healthy way to make fries. The fries took longer to cook. I never did get them to trun brown. But, everyone loved the texture and flavor. I will make them again. Finish them up in the broiler. When mine came out of the oven they did not look like Micheal's.

I LOVE Michael's recipes but struggled with this one. The lack of approximate cooking times made it hard. I boiled them correctly but they were in the oven for 45 minutes. We had to start dinner without them and in the end I had to put them under the broiler to get them browned. I will try again, but next time follow some of the other recommendations.

This was a wonderful way to do french fries. I had read the reviews before I started doing my potatoes so the changes I made from the get-go, made all the difference. I cut my potatoes on a french fry cutter, boiled them for 9 minutes, sprayed my cookie sheet with olive oil and brused my potatoes with olive oil using a basting brush, then shook seasonings on top. I baked the potatoes for 20 minutes @ 450 degrees took them out added the parmesean cheese and broiled for another 4 minutes. PERFECT!!!
