You can create up to five timers

3/4 cup sugar

1/2 cup water

1/4 cup brandy or rum

1 teaspoon pure vanilla extract

4 cups homemade ricotta or whole-milk ricotta cheese

1 1/4 cups peppermint candy canes or candies, chopped small

6 tablespoons grated bittersweet chocolate

1/4 cup espresso, cooled

24 packaged ladyfingers

Combine the sugar and water in a small saucepan. Bring to a boil over moderate heat, stirring to dissolve the sugar. Stir in the brandy and vanilla extract. Remove from the heat, transfer to a shallow bowl, and let cool.

In a large bowl, stir the ricotta with the 1 cup of the peppermint candy, 4 tablespoons of grated chocolate and 1/2 cup of the cooled brandy syrup.

Pour espresso into remaining brandy syrup.

Choose a dish that measures about 7 by 10 inches. One at a time, dunk half the ladyfingers in the brandy syrup to moisten them well, and then arrange them in a single layer in the bottom of the dish. Spread half the ricotta mixture evenly over the ladyfingers (you can also use a pastry bag). Moisten the remaining ladyfingers with the remaining syrup and arrange them over the ricotta. Top with the rest of the ricotta, spreading it evenly. Sprinkle the top with the remaining 2 tablespoons grated chocolate and the remaining peppermint candy. Cover and refrigerate for several hours before serving.

    I haven't made this but it sounds wonderful. However, I would make a few modifications. I don't think peppermint and espresso go very well together, so I would eliminate the coffee. I would add more grated chocolate, and I would switch out the brandy or rum for peppermint schnapps.

    I am know for my desserts and so made this great sounding dessert I saw prepared on Napa Style last week. I am glad my guests could not come to Christmas dinner today! The cheese was grainy, the peppermint garnish took on moisture and looked like wet pink somethings on the top. The chocolate flavor was hardly there. The ladyfingers were dry or soggy. The recipe called for 6 TBSP. of grated chocolate. How much do I buy? How many candy canes in 1 1/4 cups? The candy canes should have been written: 1 1/4 cups of crushed candy canes (about 12 average size. It did not look very pretty through the glass serving dish. Who came up with and then wrote up this recipe??? It was an expensive disappointment!

    I watched the episode in which this was made on TV, but after I read the bad reviews it was given here, I decided to try to use the complaints others had with this to try to improve it. I used 2 c moscarpone and 2 c light cream cheese instead of the 4 c ricotta (let sit at room temp. and stir well to make it creamy enough to spread and the traditional vermouth (which I have always used in tiramisu instead of rum or brandy. I was still not thrilled with the combination of the peppermint, chocolate, and traditional tiramisu flavors (the recipe may just be innately flawed, but I did receive several compliments on the dessert and certainly was at least able to enjoy it myself. If I make this again, I may try it without the chocolate; it adds little besides a decorative touch.
