I did this yesterday with his meatloaf. Very nice combination but you should either use less pesto or use more potatoes.
1 pound of potatoes in a cup of pesto is basically a soup. A very oily soup. I used more like 3 pounds of potatoes and it was great.

I make my own pesto all the time and nothing compares to it. If you thought the store bought was great. Make your own!!!! This is a fantastic recipe. Love pesto with potatoes.

I used store-bought pesto, and simply added parmesan, garlic, salt, pepper, and toasted pine nuts. It turned out beautifully. My dinner guests were very impressed :

Superb taste. Ignire those whi simply used store-bought pesto (ew! and added them to the potatoes. Take the time (and it is really quite simple/fast to make the homemade pesto. The freshness is far superior to anything in a jar or plastic container! I used the suggested amount of pesto and 1.5 lbs of small yukon golds. Worked great. If anything, the pesto could have easily flavored 2 or more pounds.

I had leftover homemade pesto that I make in the summer and then freeze until needed. This was so easy and delicious. What a nice change to mashed potatoes. Another winner.

I made this tonight for New Years dinner along with grilled salmon and green beans....delicious!! I substituted almonds for the pine nuts since I didn't have any...still wonderful!
