    Simply FABULOUS! I'd highly recommend for all garlic lovers. I didn't use the spinach but I'm sure it'd make a great addition. What a great fall/winter soup. I'll definitely be checking out some of Michael's other recipes after this one! It's been added to our family's "Tested Best"!

    I love the base of this reciepe, i think it is an amazing and almost perfect dish. I love the depth of its flavor; how it melts in your mouth. How you can taste the star "garlic" but get hints of all the other elements.
    The only reason i did not give this recipe a 5 star, was after the soup was blended it gave it almost a foaming sensation in my mouth. To give it an alternate texture i cubed, and boiled four medium potatoes till tender then added them to the soup right before serving. It counter acted the foam texture and added some body to the soup. If you prefer more of a velvety tasting soup i would not do this, it was more for personal preference but thought maybe someone out there might like it this way as well.
    Michael Chiarello is a reciepe star, for the most part his recipes are perfection in the pallet, and we the testers get the gift to explore the base of his creativity. Definetly worth trying, and savoring!

    This was a wonderful surprise. Two cups of garlic I thought might be just a little over the top, but I made the soup anyway and was it great. This one is a keeper. This well be the soup I serve for thanksgiving dinner.

    This soup is delicious. Asian markets have the pre-peeled garlic cloves, which makes it even easier to make. You don't have to be a garlic lover to love this soup. Thanks, Michael!

    This was sooooo good! It was a pain to peel all the garlic, but definitely worth it. This is a favorite in our house!

    This soup is fantastic! I used half and half and it was so creamy....it's like velvet in your mouth!! For those of you who don't want to peel the garlic, go to Costco or Sam's Club. They sell large containers of garlic already peeled. Cuts the prep time down considerably.

    My husband and I have been making this soup for a few years now, usually just in fall and winter. We love taking it to dinner parties. Where we have heard nothing but raves about it. We also have to make a second batch almost every time, since we can eat a whole batch just between the two of us over several days. IT IS THAT GOOD! Preping the garlic is time consuming, but worth it. If you like garlic at all, try this soup. You'll make it for years to come.

    I agree that this is a little time consuming but it got rave reviews from my dinner party guests. Next time, I will double the recipe so I can have some leftovers!

    I also used 1/2 heavy cream, 1/2 fat free half and half and it was still creamy and delicious.

    I made this for Halloween last night and my family loved it! My teenage son couldn't stop talking about how good it was. I didn't put as much spinach in it as it called for, and I added a few drops of green food coloring to make it resemble slime. It was delicious and I would recommend it, even if it is a lot of work. I served it with crusty french bread and Rachael Ray's yummy mummy on the side.
