    This was fantastic. I agree with the previous reviewers that it makes way too much filling, and the butter in the sauce is probably unnecessary. I cooked my pears more than 20 minutes & they were still fairly firm. I will try leaving them in the liquid overnight next time to deepen the red color. We used a pinot noir for the wine- I think a cabernet might give the pears a deeper color and flavor.

    I poached the pears in the afternoon before my dinner party. After I turned them off I left them in the wine all afternoon before I filled them. They were brilliantly dark red by the time I filled them. My company was so impressed! I had two extra pears that I did not fill. I put them in the refrigerator overnight while still in the wine. They continued to absorb the beautiful color and were even darker the next day. I ate them with lunch the next day without filling them. Delicious!

    "or until tender" - I wish I had paid more attention. My first time poaching pears, and thought they were soft enough - but had so much trouble getting the cores out. They were still soft and tasted delicious, and made a beautiful presentation.

    The mascarpone filling was exquisite! I left the pears a little too firm, but the dessert was still delicious.
