Although I love beets, this was a very lovely presentation. The flavors, earthy beets, sweet orange and pungent blue cheese. It all blended exceptionally well. My German friends loved it and so did I. This will be a staple late summer salad...I will take this one on the road too!!! This one is exceptional, again? YES.

Personally, I am not a beet fan, but I made this for my mother who loves beets. She was thrilled. I even liked it, too. While fairly time consuming to prepare, it was easy. The dressing was amazing. It looked absolutely beautiful and made me look like a chef!

The recipe was a great success with my guests although the directions were a bit confusing where it told you to add the lemon juice at two different times. I added at the second suggestion. I didnt' measure the amount of blue cheese I used but next time I will add a bit more to each salad. My guests loved it.

The presentation of the beet salad was wonderful. It looked like I cooked all day. Also the dressing,beets,and spinach was delicious.

Tangy sweetness of the sauce is nice - but it's very time consuming to reduce. Overall, the salad had a flavour that reminded me of pickled beets. Not unpleasant, but not very original - I don't feel as though it was worth the time and effort.

Very colorfull, taste very good. I was looking for a new intro to my family on beets other than the canned ones and this was perfect. Also the spinache was a new intro for them. I have very picky eaters but they really enjoyed this one. The blue cheese and roasted almonds really set it off too.

This salad rocks! The salad dresssing is to die for. It's our favorite. It takes quite a while to reduce the OJ, but it is definitely worth it. It makes a lot and you can keep in the fridge and use it later. The dressing is a great marinade for chicken too! We marinated the chicken breasts in part of the salad dressing, grilled them on a stovetop grilling pan, and served them on the salad. Yummy!

When I made this salad, which was fairly easy, my husband went crazy over it. He said it was the best salad he ever tasted. The flavors are wonderful and the dressing is out of this world. I would make this again for sure.
