Wow! That was the best best hamburger I've ever eaten! I agree about the hand-washing incident. That bothered me too, but he's forgiven! That was amazing! Also, regarding the garlic paste, I did 1 c olive oil and 1/2 c garlic cloves, like the recipe. The first time, my garlic burned. But I tried again, brought them to a boil and then all the way to low, and turned off the heat the second they started getting the least bit of brown, and they were perfect. I want to put that garlic paste on everything now! Michael, you did it again!

The quantity of garlic in this recipe does not match with the recipe seen on the TV episode. On TV, Michael uses 1 1/2 cups of garlic cloves to 1 cup of EVO for the garlic paste. When using this greater amount, it is possible to get the two 1/2 cup portions of garlic paste needed for the recipe. This may also be why Marla found it difficult to achieve the paste consistency.

Anonymous, anonymous, anonymous: Please rate the recipe and not the technique. Have you not heard of steak tartare? I found this burger to be absolutely delicious and a change from the ordinary. Apparently you are too embarrassed to give your name and state, but are quick to give condescending advice.

The burgers and sauce are good, but I found it near impossible to get the garlic paste a 'pasty' consistency.

Michael, Michael, Michael. You are a professional chef who is in millions of homes. How could you consistently use dirty contaminated hands that just touched RAW BEEF to reach into your saran wrap??? If you now use that saran wrap on something that is already prepared and ready to eat, it potentially has days or months old bacteria growing on the wrap and now touched food that won't be heated up again to kill off the bacteria. Also, if you touch that box with "clean hands" you unknowingly contaminated your hands again. Please teach not only great recies, but great kitchen practices. Food poisoning is no joke...

This was definatly an adult flavor. I made all the parts of this recipe and they were good. I don't know if I would make this again for my family but it would be great for a summer "build your own hamburger" bar. Very impressive and yummy. My favorit part was the mushrooms. Good Stuff!

I would highly recommend this burger recipe to anyone. The dijon garlic sauce tastes delicious.
