Ingredients

1 pound salami, cut into 1/4-inch pieces
6 tomatoes, diced
1/2 cup fresh basil leaves
1/2 pound mozzarella, cut into 1/2-inch pieces
Salt and freshly ground black pepper
Olive oil, for drizzling
Vinegar, for drizzling

Directions

In a large bowl, combine salami, tomatoes, basil, and mozzarella. Season, to taste, with salt and pepper. Drizzle with olive oil and vinegar and toss well.

I just loved this salad. I added fresh baby spinach instead of the basil as my store was out. I've made this at least 5... times already this spring. I also used grape tomatoes. I'm the only one that eats it but i do keep it fresh for a couple of days. Just love it.Read more

I loved this dish. I would not categorize it as a "main entree" though. I used balsamic vinegar and added 1/4 cup of sliced... red onion. It was awesome! Tip: fresh mozzarella balls make it even easier. I just added the entire 8oz container.Read more
