    I made this for my teenagers and my low-carb husband. We all loved it. I just puree a mango and drizzle on top.

    I had lots of zucchini to use and wanted to make this but didn't have time or the ingredients for the sauce. I had a jar of Mango Chutney (Major Greys in the fridge and seved this with it for the sweet contrast and it was a huge hit.

    I usually try to make Michael's recipes as is because they are so great but in a pinch this works.

    this was a quick solution for a light summer dinner.
    the mango sauce i prepared a few days early and used as a vinagrettte on salad, and it tastes great for both dishes!
    wrapping the proscuitto took a little bit of time, but was well worth it.

    As everyone else has said, the mango vingegar is fabulous! Who'd have thought that it would pair so well w/ zuchinni & ham but the sweet/salty/hot/cold combo is to die for! And the mango vinegar (I also made the onion sauce & it was good but it just can't compete w/ the mango vinegar is very versatile. I've used it as a dressing on a romaine salad & topped the salad w/ caribbean shrimp w/ fruity salsa. I have drizzled it over some basmati rice, then topped that w/ grlled fish & a fruit salsa.

    Easy and my friends loved it! You hardly notice the zucchini as the prosciuto dominates. Especially loved the onion sauce!

    I was reallys surprised how good these batons are. The onion sauce is OK, but the mango is awsome... this is a keeper.
