Couldn't find watercress but chicory worked well. Did have a little trouble getting the fennel and carrots thin enough. Mandolin would be nice.

Michael really does make entertaining easy. This salad was delicious, unique, a nice medley of flavors and a great break from the norm.

Made for a dinner party, everyone raved about it. I had to add about 2 teaspoons white sugar. It was the perfect follow up to the rich eggplant parmesean we made.

This is one of my favorite salads to make. I usually make it twice a week.
