    I made this for 20 friends tonight as a taco filling and it was a big hit. I cut the chipotle peppers with some dried anchos so it was less spicy and used fresh thyme and pureed roasted garlic and it turned out great. Will definitley make this again.

    Don't fret too much about the "rub" ingredients, just roast your own garlic, then chop it. Use fresh garlic, it doesn't really matter. When the meat is cooked, I pull/shred it, I heat up some good bbq sauce, mix it with the pork then pile it on bulkie rolls. Everyone LOVES it! It's phenominal :

    Chopped roasted garlic is easy. Roast the garlic in the oven in some tin foil for about 20 minutes. Then chop it up.
    Haven't yet made this recipe but it looked good on tv and I plan to try it.

    I have made Michael's "Forever Roasted Pork" from his Tra Vigne cookbook and it's is the most fantastic pork I've ever tried. It is basically the same technique, with a different spice rub. I really want to make this one, but I have the same question the previous reviewer asked: where can I find this "minced roasted garlic" for the rub??
