excellent fresh vegs. Since there is a fresh spinach scare, I used frozen and it was delicious. a little fussy.

This ratatouille bears no resemblance to the gooey, eggplant-based vegetable stew I once knew. By sauteeing each vegetable separately, Mr. Chiarello has found a way to sustain the integrity of each element of the dish. This recipe is easy and fun to prepare and the results are simply wonderful. Make this as an entree at the peak of summertime, when fresh tomatoes, squash and peppers are abundant--you won't be disappointed. Thank you, Michael Chiarello.

This was labor intensive but delicious. I used some grated Asiago to top it. The following day I served the leftovers (what little there was over some penne.

This dish is so good. My family loved it, even my two year old! It is a great way for kids to eat their veggies. The recipe was easy to follow. Way to go Michael!
