    I thought this recipe was excellent!!!!! my husband and friends raved about how delicious it was. My spanish grandmother used to make paella and sadly never left her recipe to us but surprisingly enough this recipe was as close as i will get to duplicating her recipe. The directions were so clear i had a very easy time executing them. Also i added live mussels during the last broth addition and they turned out wonderful!

    This was a excellant dish except I'd use reg white rice. The rice was too hard etc.

    Sorry Michael, usually I love your recipes!! But... This was not a very tasty recipe. My family gave this a thumbs down!

    Michael took a simple traditional dish and worked it over and over to no avail.
    Hock suace....come on a smoked hock cut or whole mixed throughout the dish would have the same effect let alone a long complicated process such as that of Michaels.
    Good taste is not tricky or time consuming yet easy and enjoyable.
    Get a grip Michael and back to basics!

    I halfed it for a smaller group and it was still a ton of Paelle. I used water instead of the stock and added the tomato and saffron to the rice.

    This was truly excellent. A word of warning -- it serves WAY more than 8-10, more like 10-12. There were supposed to be 8 of us but we ended up with 6 so I cut back on the rice by about a cup...still had half leftover. It wasn't left over because folks didn't like it -- everyone ate A LOT! You could probably cut way to 4 ital sausage, and 4 pieces of chicken breast to get closer to serving 8-10. But it is excellent paella. I think the secret is the ham hock broth.

    Takes a lot of work to make. Taste is not as good as the paella with shellfish, shrimp, fish and chicken.

    I have lots of paella recipes, but had not found one that I actually thought I would like. None really sounded like they would have enough flavor. I think this one might just be the one. I can't wait to make it!!!
