    This is the best Minestrone recipe I have tried! I've tried several and none tasted as good as this one. I did leave out the pasta to make it a little lighter but I did add Garbanzo beans in addition to the Cannellini and I also added 1 red bell pepper and 1 orange bell pepper for some color. Definitely use fresh herbs since they taste so much better and the pancetta added a nice little background flavor. This was delicious and I'm planning to make another batch soon.
    FYI - This was the first time I used pancetta and the meat dept. people at the grocery store stated they didn't carry it but I found it is carried in the deli dept. with the sliced meats.

    Good recipe. It's quick and easy. I haven't made too many soups so I don't have much to compare it to. I will say that you need to double up on the broth if you plan on having leftovers. The veggies soak up the broth by the time you go to reheat it the next day. Leave the noodles out until you're ready to eat. I've made this a few times and enjoy it.

    This was a delicious tasting soup. I cut the recipe in half thinking I would have tons leftover, silly me. After 2 days it is gone and now I have none to freeze for future meals. I used about a cup more broth (defrosted broth from freezer and had a bit too much and added some cabbage slaw mix I had in the fridge. I'm a vegetarian so I did not add the pancetta.

    I have made this a few times, and I really like it! I have the deli guy slice the 1/4 pound pancetta thickly, and then I cube it for the saute. It works out great!

    I LOVED THIS!! I didnt use the pancetta, just a little bit of sausage and it was so good! You HAVE to try this!

    This recipe is super easy and very tasty! I've made it a few times now, each time without the pancetta (only because I didn't have it in the house. I throw in some shredded chicken to make it a bit heartier and my family loves it! I always serve the pasta on the side, so it never gets soggy. Yum!

    I make this soup very often and love it!!! Definitely use the pancetta because it makes the flavor! I have used bacon as well, but like the pancetta flavor better. A must try!

    Best minestrone soup recipe I've tried so far! The last few I've tried lacked so much flavor, but not this recipe. I used a 50/50 blend of Tuscan Chicken Broth and Beef Broth and it was amazing. I do recommend using pancetta if available, it adds a nice background flavor. I also did a 50/50 blend of fresh to dry herbs, as well as use both thyme and rosemary. All around great, and easy recipe, I would definately make this again.
