    I make this soup very often and love it!!! Definitely use the pancetta because it makes the flavor! I have used bacon as well, but like the pancetta flavor better. A must try!

    Delicious! Very healthy and tasty!!! I used organic beef broth and didn't put the potatoes... So good in my preggo picky belly! :

    Best minestrone soup recipe I've tried so far! The last few I've tried lacked so much flavor, but not this recipe. I used a 50/50 blend of Tuscan Chicken Broth and Beef Broth and it was amazing. I do recommend using pancetta if available, it adds a nice background flavor. I also did a 50/50 blend of fresh to dry herbs, as well as use both thyme and rosemary. All around great, and easy recipe, I would definately make this again.

    Do you want to know how good this is? My step father a meat and potato man loved this soup. My neighbor a woman who hates beans loved this soup. That how good it is. I did use a homemade chicken broth didn't have enough so added a good guality vegetable stock to it. I really believe the broth is the key! Paired it with Rachael Ray's Italian grilled cheese n tomato A MATCH MADE IN HEAVEN!

    I've been making this recipe for a while now, it is familly favorite.
    Very good also with turkey bacon , I even made it without meat and it is a light yet comforting soup.
    Super easy but feeled with flavors, it is the best if you get sick and need a little comfort

    Delicious! My family's favorite soup! I use turkey bacon instead of the pancetta because we don't eat pork. The turkey bacon adds tremendous flavor to the soup. When I made it the first time, I forgot to get fresh thyme so I used the dry thyme I had in my spice rack and it turned out wonderful and use that ever since because it was great! Also I use regular Parmesan, because it costs a lot less and its wonderful!

    This is a great minestrone! I used half beef, half chicken broth and threw in some leftover stock from turkey day. Also the parm rind. Adding the pasta at the end is a great idea, why didn't I think of that? Also, at the end, put a tiny spoon of homemade pesto on the top. I'll be making this one again.

    I made this recipe last weekend. I was unable to find pancetta at my little grocery store so I left that out. I also added both thyme and rosemary. My husband and I enjoyed it but we definitely thought it was missing something. Possibly the extra flavor from the pancetta? The second and third day was better but I think I might try a different recipe next time...

    I made this with only a few changes because I didn't have pancetta or zucchini. I omitted the pancetta, and replaced the zucchini with chopped fresh green beans. I also added a dollop of homemade pesto, which I make in the fall when I chop down my plants and freeze in ice cube trays -- then baggies once frozen. I used whole wheat macaroni for additional flavor and fiber. My husband just scarfed down a bowl with some whole grain bread, and I'm sure we'll be having this for dinner tonight. Delicious and healthy!
