Made double the recipe for company. Used the food processor to pulse the veggies so no chopping was needed! Used half chicken stock and half beef stock to deepen the flavor. I chopped the garlic so there were no large pieces to bite into. Added a rind of Asiago cheese (as recommended by Giada, but she used Parm. I suggest adding a sprinkling of fresh flat leaf parsley to each bowl before serving and use shredded parm instead of grated. Wonderful soup!

I made this for my husband last night and we both LOVED it! It does take some time to chop all the veggies, but it's definitely worth the effort! The soup is very flavorful, healthy & hearty!
If you have the time to chop veggies and you want to wow someone with a new recipe, you won't be dissappointed!!!! I will continue to make this and share it with all my fellow foodies:

I substituted butternut squash for the zucchini and it is wonderful! I used my homemade chicken stock from rotisserie chicken meal two nights prior and it was perfect.

I followed the recipe and cooking instructions. I bought the best ingredients from Bristol Farms. I was not happy with the taste. I think it came from the garlic where each clove was to be cut in 1/2. I did not like is biting into 1/2 clove of garlic. It was overpowering. I think the garlic would be better minced. And, I think the soup should have simmered longer because I could barely taste the rosemary.

I have prepared this soup twice and thoroughly enjoyed it both times! I followed the exact recipe the first time. The second time that I tried it, I decided to use more broth and mix chiken and beef broth. It is a great recipe and in popular demand with my family. It's an awesome recipe.

This soup was delicious! Very easy to make. My husband, who doesn't eat vegetables loved it. I don't care for the spice thyme, so I substituted oragano, and it was perfect. Would highly recommend this recipe. Thank you Michael!

I travel alot and my 14 yr old son wanted some homemade soup for dinner. With me in New York and him in Texas, I went online and guided him through this recipe over the phone. A nice bonding hour over the phone as he cooked step by step. He called me after eating, moaning saying how him and Dad each had 3 bowls and couldn't get off the couch. What's new?!!! EXCELLENT RECIPE! He was so proud of himself and now wants me to find some other recipes to cook together over the phone. BTW, we also added some red pepper flakes - nice bite to it.
