I didn't have pancetta, but otherwise followed the recipe as is. It turned out absolutely delicious and full of flavor--especially with a drizzle of extra virgin olive oil and a sprinking of parmigiano. Looking forward to the leftovers.

I made this for a group of 12 friends at a vegetarian dinner party and it was so popular! I left out the pancetta of course, and it was still very flavorful and delicious. I also added extra pasta, which lead to there not being enough broth and making the dish more of a chunky stew, but there were no complaints! I will definitely be making this one again.

My sister and I recently decided to try and eat healthy so I made this soup today. Even though the reviews were so good, I was still surprised at how delicious it was. We omitted the pancetta to minimize the fat content and it was still extremely flavorful. We never knew eating this healthy could be sooo good and satisfying : I took some pointers from other reviewers and added some red pepper flakes to give it some more spice. This one's most definitely a keeper!!!

No matter what the weather, no matter what my mood, I always default to making this soup to make me feel even better! It is so tasty, half the soup doesn't even make it to my bowl cause I eat it straight from the pot.
What's best about the recipe is its flexibility of ingredients - should you not have cannelloni beans on hand, try a butter bean or kidney bean if that's all you've got in the pantry.
Hands down, whenever I need a hearty meal that full of no guilt-veggies, this is the recipe I go-to in a heartbeat.
Thanks for the great recipe, Michael - I just made some and will be "hitting off the leftovers" all weekend.

Loved this soup. The pancetta gave it a wonderful depth, I would recommend adding it. They sell a pre-chopped package at TJs that is perfect. I used a little less olive oil (1tbsp less, low-sodium chicken broth, fresh thyme and rosemary (more thyme than rosemary, and cut down on the veggies so I wouldnt need more broth. I used 2 c zucchini, and subbed in green beans for potatoes since I am on South Beach. The green beans need to be cut pretty small in order to cook properly. Other than that, not many changes. I do feel the pancetta and fresh herbs are the key ingredients. I also added a dash of red pepper flakes for a bit of zip. I'll be making this again!

VERY tasty soup! Full of fresh vegetables and light tasting. I rated 4 stars because the bacon (I used instead of pancetta added a slightly heavy taste. It added depth, but came across a little too "bacony" for me. I think if I had used pancetta instead it would be less smoky. I added more stock based on othe users' comments, and was glad I did, as addition of pasta needed more broth. Definitely recommend for light, low fat dinner!

I was very excited to try this recipe. It turned out kind of bland, wish it was more flavorful. I added some extra seasonings like pepper flakes, more salt, celery salt,thyme etc at the end, to zip it up. I agree that it could use more broth, to compliment the abundance of veggies.

This is a great recipe but I did tweak it a bit and made a handful of changes/additions. i added ground sausage, cabbage, spinach and kidney beans. I'll probably throw in some chick peas next time! I also added a dash of hot pepper flakes. This is a keeper for sure - everyone loved it and it's so easy to make.

Very tasty. One of my favorite soups ever. I made it without the pancetta and added some red pepper flakes to give it a little kick. It was delicious! Try it, you'll love it!

Since the weather here is starting to cool off its soup making season!..and I was searching for something quick and easy..Well let me tell you...this is one of the best recipes for Minestrone I have ever had...I used bacon because I did not have pancetta on hand..and I added a rind of parmesean to the soup as it cooked for even more flavor...My son practically devoured this soup singlehandedly in a weeks time. As far as chopping the veggies...its quick and easy with the right tools...I use my Santouku knife and its done in five minutes flat...I suppose I could use my food processor..but why bother when I dont have to clean the processor....If you have not tried this soup...your missing a real treat!....Thanks Michael and thanks Food Network for publishing this recipe!
