    This soup is delicious. Perfect flavoring and chock full of healthy veggies. My husband and I had this 3 night's in a row. One thing though..I would not call this "super quick". The chopping of the vegetables takes some time, but it's worth it.

    Michael's Minestrone is delicious as is Sara Moulton's and other Food Networkers. But why don't they consider using the Cuisinart to slice and chop vegetables?
    The Cuisinart can julienne or dice carrots, onions, zucchini--you name it- in no time. You don't even have to wash it out until you have finished all the chopping and dicing.
    The Immersion blender/chopper works beautifully, too, for garlic and herbs.
    I have begun to think there is a liability problem with the complete avoidance of tools like these. But surely, kitchen knives are pretty scary, too.
    I am all in favor of anything that will make it easier for us to prepare homecooked, fresh meals.
    I do enjoy the availability of new recipes. At 77, I've used a lot of old ones, and it is fun to see some of them, like summer pudding and minestrone, being resurrected.

    My family gobbled this up. Because I have five children I double every recipe. I used way to many noodles, next time I will not double those. I also used Turkey Ham because I did not have pancetta or anything like it around the house.
    We are having it again for lunch today. YUM!

    the soup is very flavorful and healthy! The chopping of the veggies takes a while but it's definitely worth the time and effort. I used wagon wheel pasta and the parmesan rind for extra flavor. I did add quite a bit of salt, pepper, and chili powder to make it more tasty. I will definitely make this soup again! I have leftovers that will last for days!

    This healthy minestrone soup is a great, tasty way to use left over vegetables lurking in the refridgerator.

    I also added leftover chicken and it made a terrific dinner. The parmesan is essential.

    This soup receipe is terrific. My entire family loves it. It is hearty, tasty and nutritous. I prefer the veggies cut into small pieces. I also change up the stock. Sometimes I use vegetable stock only and sometimes I use 1/2 chicken and 1/2 vegetable. It gives it a nice flavor. For noodles I have used No Yolk egg noodles, small size shells or the tubetti. Also to make it truly a meal in itself I will buy already cooked chicken breast, cut into small pieces and add to the soup. There are so many things you can do with it.

    After visiting two well known Italian restaurants for lunches last week, and having their Minestrone soup, I wanted to find a good recipe for it. This is it! The flavors are magnificent! The only thing I will do next time is increase the vegetables, using green beans too, and decrease the pasta a little bit. Thanks Michael!

    Excellent and quick. I started the soup with 5 slices of smoked center cut bacon. I did put a rind from an expensive imported parmaggiano reggiano in and didn't like how it changed the freshness and sweetness of the soup. It also mitigated the thyme. i love it in other soups, but in this one, I'll leave the recipe as is. It was 5 stars before the cheese.

    We loved the flavors in this soup. I think all the ingredients went together well - the pancetta is especially important. Next time I think we'll reduce the amount of vegetables, as there didn't seem to be enough broth. Worth making again though! A real keeper!

    This soup was delicious. I left out the pancetta and I used half beef broth and half chicken broth. Also, in one of the other recipes for minestrone I found this recipe for toasted bread crumps that you put on top of the soup and that really make it delicious!
    4 c. fresh bread crumps
    1 c. grated parmesian
    1 T. thyme
    salt and pepper
    drizzle with olive oil and bake 350 for 20 minutes or until toasted.
