I followed this recipe almost exactly (which I almost never do and this turned out as good if not better as any minestrone I've ever had.I grew up working in fine Italian restaurants so this was a treat for me. I used no thyme, but did add basil. Use a good romano cheese at the end instead of parmesan.

I was amazed at how simple yet delicious this minestrone came out. The broth tasted rich and flavorful and the potatoes, carrots and beans absorbed the broth beautifully. The only change I would make would be to read the recipe more carefully next time - I cut all the vegetables and sliced the pancetta to big. The soup would benefit from all small vegetables.

Very good, filling soup. I thought it needed a bit more juice, maybe another can of diced tomatoes. Also took me an hour to prep instead of the 30 minutes listed. My husband loved it. I will probably make it again.

This is the best minestrone I have ever had....not to mention easy. I had a bit left over and topped some whole grain pasta with it...another meal done!

This is a great recipe. So easy to put together with so much flavor. I usually shy away from Michael's recipes since they seem way to involved but this one was super easy. Give it a try.
