Ingredients
- 2 large store-bought pre-baked pizza shells
- Your favorite jarred tomato sauce
- 1 pound grated mozzarella cheese
- Grated Pecorino Romano or Parmigiano-Reggiano, as needed
- Leaves from 1 large sprig fresh basil
Directions
Preheat oven to 450 degrees F.
Cut rounds from pizza dough using a 2-inch round cutter to make tiny individual crusts. Place pizza rounds on a baking sheet, top with sauce, and cover with mozzarella. Sprinkle a light dusting of grated Pecorino or Parmigiano on top. Bake until cheese is perfectly melted, approximately 10 minutes.
Cut basil leaves into thin strips and sprinkle on top of pizzas with some more grated cheese before serving.

I like to use english muffins or even pita bread to make some delicious tasting little pizzas for a long time now.
Also I use Pillsburry hot roll mix to make a pizza dough.
Fast to make and always comes out great every time.

I have made this as an appetizer for two of my dinner parties and everyone loves them!! I used pillsbury pizza dough and italian mix of cheeses instead of what is listed. Its great for dinner parties because it takes very little effort and you can pop them right in the door when guests walk in (and they are warm and ready minutes later. When they come out of the oven, I place some shaved parmasean on top and then the fresh basil. Everyone loves pizza and the fresh basil and the parmasean cheese give it the fancier appeal. And like I said, its a big hit!!
