    I make milanese often with chicken, pork and fish. I must say this was AMAZING! Make sure you use ebough olive oil and wipe the pan clean in between batches, or the turkey really sticks and you loose all the yummy coating. I don't even like arugula, but I ate it all! I like to serve the salad under the turkey and speinkle parm. cheese shavings on the salad prior to putting the turkey on top. Loved this dish...

    You can use chicken instead of the turkey to change things up a bit.
