    Went with every ingredient except the cream and chicken broth. Used two medium red potatoes to thicken and water instead of the chicken broth; seasoned with Chef Paul's Vegetable Magic. It was great. Very tasty.

    This is now one of my top 5 favorite soups in the world. Don't let the ingredient list throw you off. I looked at the list of ingredients and didn't think the soup would end up with a lot of flavor, but it's really unbelievable. I can't wait to make another batch.

    Wow! This is great soup. The only change I made was to add very little cream. It can stand alone without it. Don't delete the lemon, it adds so much to the flavor. Enjoy with some crusty bread and a salad.

    I absolutely love this soup. I've added a half pound of fresh asparagus and use 1 t of ground thyme - no cream is necessary. My husband requests that I make it weekly now... Amazing and sooo healthy. He had no idea until his cholesterol dropped 20 points. Yummy.

    I am eating some as I write this. Made as directed, except that I used an immersion blender (carefully! in the main pot, instead of pureeing batches. Finished it by blending in half a package of Boursin cheese.

    Was acutally looking for recipes to use up some buttermilk and made this one. I used home made chicken stock and it turned out great. The hubby ate the left overs cold and said it was great that way too! This one is a keeper.

    So healthy and yet so satisfying! I omitted the lemon zest accidentally and I don't think the soup suffered at all. I finished the soup with reduced fat sour cream and a little half and half instead of Michael's suggested cream or buttermilk. It is really, really tasty and beautiful in a bowl. I served it with a little mound of Quatro Formagio in the center. Love it.

    PS. According to my calculations, if you use 1/4 cup reduced fat sour cream and a half cup of half and half, this soup comes out to be roughly 3 Weight Watchers' points per serving (8 servings total. Not too bad!!

    This soup is delicious! And surprisingly simple to make (except it was a little tedious to prepare the broccoli. This was a refreshing and light soup. I will make this many times.

    Excellent recipe. One of the best that I have tried and a great way to get extra veggies (i.e. spinach into my kids. Also added carrotts and I didn't have fresh thyme but added dried - still turned out great. Also added a bit of flour before the broth to thicken. Yum!!!
