So easy and flavorful. I don't like licorice at all but this recipe made a great turkey. No need to get those fancy new roasting pans either.

I made this recipe for Thanksgiving this year and it was a HUGE hit with the family. I will make it again and again. The only thing that I added was fresh sage leaves with the rosemary to the inside of the turkey. Thanks Michael!

I've been making this turkey since 2005 and I'm required to make it every year. As long as you follow the directions to a T. You'll have an amazing juicy Turkey. The previous person probably put too much rub and that's why they didn't like it. Just don't over do it on the rub and it will be fine. Thanks, Chris

I wanted to try something new this thanksgiving. I usually used a rub that consists of Rosemary, thyme, sage, garlic, salt and pepper. I read all the great reviews on this rub and decided to try it. I toasted the fennel, coriander and pepper and the smell really turned me off. Fennell has a smell and a taste of black licorice. If you don't like black licorice....DONT make this rub. Other reviews did say the smell was bad so I decided to go forward. The turkey came out moist and the rub tasted better than it smelled, however I still tasted the black licorice (fennel taste in every bite and I really didn't like it as much as my "usual" rub. If you are a fan of fennel than you will probably like this. If you are not....stay away!!!

This is my absolute favorite way to prepare a roasted turkey. My family doesn't want our turkey prepared any other way as it cooks up quickly and is always super moist. Thanks Michael - love your tips for preparing as much as possible ahead of the actual party.

We made this turkey last year for Thanksgiving and will do so again this year. The fennel rub has such a unique flavor and the turkey is very moist. We only roasted one turkey, so we had enough rub to use later. The gravy that accompanies this recipe is phenomenal-- by far the best gravy we have ever had.

Even my friend whose hobby is gourmet cooking raved about this turkey and swears that she'll never roast a "traditional" turkey again after tasting this one. Excellent recipe, and a hit with all my Thanksgiving guests, young and old.

This recipe was surprisingly delicious and easy to prepare. Our family and friends commented several times over about the flavor, juiciness and crispiness of the turkey. The "cooks" at our Thanksgiving dinner were clammoring for the recipe. One previous reviewer mentioned the fragrance of the rub at preparation was not so appealing. I agree, and I was amazed at how great the flavors worked to make for one (actually two delicious turkey(s. I can't wait to try it on cornish hens!

This recipe created the most scrumptious, flavorful and intoxicating roasted turkey that I have ever prepared. Thank you!
