    Sorry, Mom, but this is the best stuffiing I have ever had!

    Fried up bacon instead of the smoked ham, and used the bacon drippings instead of butter.

    Used canned Trader Joe's whole kernel corn because that was all I had.

    Only downside------I made 1/4 the recipe (1 qt corning ware pan because I didn't want to waste the ingredients if it wasn't yummy -- which is definitely was!

    A real keeper!

    First off, to the earlier poster, Michael suggested either buying a premade cornbread or making one before hand. To toast it, just cut into cubes and put in 375 oven for 20 - 25 minutes.

    I though the stuffing was just marginal. I will say it was my first cornbread stuffing ever and I think I am a bigger fan of the typical sage bread cube stuffing. the ham seemed a little off to me with the turkey. The stuffing was sweet and kind of reminded me of a sweet corn tamale which I like. My stuffing was super moist but I made sure to pour all off the liquid into the baking dish.

    I did not see the beginning of the show when he made this stuffing. Does he make cornbread by package directions then cut and toast? I dont want to mess up the "cornbread" because it is the main part! I know it will be great!

    I followed the directions in the recipe and also watched the episode where Michael made the stuffing. Only modifications were frozen corn (no fresh available and a yellow pepper instead of a red pepper (thanks to hubby not understanding my list. I just wanted something to pull all the ingredients together; the dressing was neither soggy nor dry, but it seemed more like eating a dry casserole than stuffing. I hate to say it, but it was blah.
    Come on Mike, you're an Iron Chef. You can do better than this recipe!!

    I disagree. She was asking for a stuffing recipe that would not be "dry" like all of her other monthly attempts to make her grandmothers recipe. He delivered and delivered well! This is an AWESOME tasting recipe! Made this for dinner tonight and well worth it! Thanks Michael.

    but wasn't the e-mailer/video asking for help with making her grandmother's cornbread stuffing. Some how I seriously doubt that her southern belle grandmother made cornbread stuffing like this. I am sure Micheal's recipe is delicious but I was excited to learn how to make a true southern cornbread stuffing dish. Micheal did not answer this lady and her two daughters question at all.
