  • 1 cup crumbled barrel-aged feta
  • 1/4 cup chopped fresh dill

This is very fresh and tasty. I cubed the carrots and blanched them and then cubed the beets the same size. Soaking the red onion in ice water and some red wine vinegar in the fridge for a while is tasty. I will definitely make it again, especially in the summer.

Super easy to make, I par boiled the carrots to make them tender. Also roasted the beets, not sure if this recipe specifies but very simple ingredients and easy to make. The mint and dill add a lot of freshness, will definitely make again!
