With a last-minute guests arriving for dinner, I needed to stretch four filet mignon steaks to feed six people. I didn't have any mushrooms on hand but forged on. Everyone raved. Great sauce, great flavor. Even my "picky" 17-year old loved it.

This is very quick and easy. I didn't have Dijon so substituted with regular mustard. It gave a nice tang to the sauce. Also, I was out of dill and substituted with thyme...very nice.

My husband and I are on a really tight budget, having just had our first baby. I wanted to try this recipe, but couldn't afford the filet mignon. I used regular stewing beef and threw it and 1 can beef broth into a covered pot on the stovetop on a low simmer for 6 hours. When I was ready to make dinner I followed recipe and just added the stew beef at the last minute...IT WAS DELICIOUS and much cheaper than the origional recipe. This would be better when feeding a larger crowd. I also added a clove or two of minced garlic to the onions and mushrooms. This is our permanent beef stroganoff recipe. A real keeper.

Was outstanding. I did change meat to sirloin and mushrooms to Portabella. It was definitely a do again meal.
    Thanks

Great recipe. For a creamier sauce, use extra sour cream and cook onions, mushrooms, and sauce in same pan meat was browned in.

The title says it all. This recipe is easy and rewarding. I usually cook the meat and then the sauce in the same pan, a cast iron skillet works well.
