- 4 large ripe tomatoes, seeded and cut into 1/2 inch dice
- 1/4 to 1/2 cup sliced scallions or to taste
- 1 to 2 cloves minced garlic
- 1 to 2 small pickled or fresh Jalapeno peppers
- Olive oil to taste
- Red wine vinegar to taste
Combine all of the ingredients and season to taste with salt. Transfer to a jar. Will keep in the fridge for a week.
