- 2 cups chicken broth
- 1 cup tomato or vegetable juice
- 1/4 cup long grain rice
- 1/2 boneless chicken breast, cooked and cut into 1/2 inch dice
- Green onion, thinly sliced
Bring broth, juice and rice to a boil and simmer for 15 minutes. Add cooked chicken and simmer 5 minutes longer. Ladle out and garnish with green onion.
