Super Deluxe Old Fashioned Macaroni and Cheese

Ingredients

  • 8 tablespoons unsalted butter
  • 4 tablespoons all purpose flour
  • 2 cups milk
  • 8 ounces sharp white cheddar cheese, grated
  • 1 cup heavy cream
  • Salt and cayenne pepper
  • 1/4 cup slivered reconstitituted sundried tomatoes
  • 3/4 pound penne, cook to the al dente stage, drained and cooled
  • 1/3 cup fresh bread crumbs

Directions

Preheat oven to 350 degrees F. Meanwhile, melt 4 tablespoons of the butter in a non-reactive saucepan. When bubbly whisk in flour and cook for a couple of minutes, stirring every now and then. Slowly whisk in the milk and bring to a boil. Reduce heat to low and simmer, whisking on occasion for 3 to 4 minutes. Remove pan from heat and whisk in grated cheese. Stir vigorously just until cheese has melted. Then whisk in heavy cream to adjust the texture and season to taste with salt and cayenne pepper. In a mixing bowl combine sauce with sun dried tomatoes and drained macaroni and adjust seasoning. Transfer mixture to a 13 x 9-inch baking pan and spread it out evenly. Sprinkle bread crumbs on top and dot with remaining 4 tablespoons of butter. Bake until hot and bubbly, about 30 minutes. Let stand 5 minutes before serving.

    I didn't use the sundried tomatoes, only because my boyfriend doesn't like tomatoes; I do intend on trying it with that... soon. Instead of breadcrumbs on top at the very end I cook some Panko breadcumbs in butter on the stove and sprinkle on top. My boyfriends friends ask for me to make this when they come over for dinner. It's a huge hit!!Read more

    Followed the recipe exactly but none of my family liked it. Very intense butter flavor and didnt really taste the cheese.... Also took much longer prep time. Would not make again! Will try Paula Dean's next and hope it will be much better.Read more

    Easy, creamy and don't bake it!

    My brother-in-law makes an awesome smoked Gouda mac & cheese. I wanted to try to make it but was too impatient to wait while... he snail mailed the recipe to me. This recipe looked like it would turn out a nice creamy smooth sauce for the pasta so I figured I'd try it with smoked Gouda. I also used 1 tablespoon more flour and Cellentina pasta (a much more heartier sized and shaped pasta). I did not bake it but spooned it up from the stove top pot. My brother-in-law does not bake his either as this causes the sauce to get soaked up into the pasta making the dish to dry and the pasta soggy. I prefer my mac & cheese with al dente pasta enrobed in a creamy rich cheesy sauce which is just what this turned out to be! It was phenominal!!!! Try it with smoked Gouda, you will not be disappointed! This cheese has a very mild creamy taste with a touch of rich smokiness.Read more
