    I tried this recipe because of all the recipes for red snapper, I only had ingredients available for this one. What a great discovery!!
    My husband loved it; he's from Louisiana and requires spicy food. I don't, so in my "parchment packet", I omitted the jalapenos. I also made two packets, since I only had two fillets (one from each side of the fish. Preparation is really quick.
    I also omitted the string, and just folded the edges of the parchment paper to seal it.
    I served it with some brown rice to soak up the sauce, and a crisp simple salad with avocados on the side...it's on our favorites list!
