Ingredients
- 2 pounds ground beef
- 1 small onion, finely chopped
- 1/2 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup fresh bread crumbs
- 2 eggs, lightly beaten
- Salt
- Pepper
- 2 teaspoon chili powder, optional
- 3/4 cup ketchup or tomato sauce
- 2 tablespoon mustard
- 1/4 cup chopped fresh parsley
- 4 slices bacon
Directions
Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix well. Gently mound the meat mixture into a metal 9x5 loaf pan. Top loaf with 4 strips of bacon. Bake for 1 hour and 10 to 20 minutes. Remove from oven and let sit for 15 minutes before slicing

This is a delicious meatloaf! It's moist and flavorful and didn't even need a ketchup/bbq sauce/gravy topping! I substitute ground turkey and turkey bacon to the recipe to make it a little lighter.

I have tried dozens of meatloaf recipes and this one is the absolute favorite of my husband. Very traditional, but moist and flavorful; this is the recipe I keep coming back to. I do omit the bell pepper and chili powder and add Worcestershire sauce and mustard. Of course, we might be biased since we're Midwesterners!

This is way too much onion and pepper, even for someone who loves them. I recommend you cut in half what it calls for. Then you'll have a GREAT meatloaf.
