I remember watching this episode of Throwdown and was dying to make this dish. Finally found the recipe and made it for my St. Joseph's celebration this week, boy was it worth the wait! This dish is fantastic and really easy to make. This was my first time making eggplant parm but you can guarantee I will make it again with this specific recipe. Just another dish to prove Arthur Avenue is the mecca of good food.

Right away I could tell that this recipe was going to be special and it was. The use of quality ingredients really made an impact on the dish. I used fresh mozzarella and garlic and herb breadcrumbs and it was wonderful! The dish was savory and you reallly couldn't tell that it was eggplant. The whole family loved it and I will be making it again in the future!

This dish is EXCELLENT! My whole family loved it. The only problem I had was that my oil kept burning and turning black while I was frying the eggplant (I guess I had the burner turned up too high. I had to dump it out and start over twice. I would cook this every few weeks, but the ingredients are a little pricey to have to buy very often (my grocery bill was $30, and I only bought things for this meal!.

I've had a lot of luck with recipes from foodnetwork.com but this one takes the cake. Rather easy to make for such a knockout dinner. I have to that this eggplant is unbeatable, sorry Bobby!

I've made this a few times and always get a great response! Here are some things I've tweeked:

    - skip the flour - it makes the breading too heavy - dip in egg then straight in breadcrumbs

    - use fresh mozz cheese

    - Fresh Asiago cheese will give the dish a little something different than the standard Parm flavor. Sometimes I mix the 2 cheeses

Super Easy - Delicious - and my man, who doesn't like eggplant, sometimes can't even tell it's in there!

This had the makings of something special.... but it ended up veggie/tomato mush...
Be sure to us REAL fresh mozz- not the pre- shredded stuff. It just doesn't melt right, or add any flavor.
I think I would have loved it if I had stuck to the recipe.
