    Can anyone tell me how long the creme fraiche will last in your refrigerator if one doesn't use it all in one recipe. Thank you.

    i have made this with sour cream1 part&3parts heavy cream left overnight mixed&put in refrigerator. wonderful also made same with buttermilk very good i perfer the sour cream

    It is much cheaper to make this yourself than to buy pre-made. To answer Stacey, yes you leave it out up to 24 hours, but if you live in Florida and its a hot and humid day, you may not want to leave it so long. According to Julia Child it takes between 5- 8 hours on a hot and humid day.

    The directions say to mix together and leave out overnight, and then refrigerate... is that right? Won't it go bad?

    I use sour cream in place of buttermilk, its easier to find and it comes out just as creamy and smooth

    I have several recipes calling for creme fraiche but can never find it, and it is very expensive. I made this for a pasta sauce - it is perfect! And I had to use ultra pasturized cream - it work fine! Nice and creamy and thick.

    Also should belisted by the common misspellings cream fresh or creme fresh. So, many receipes call for this and so few stores carry it.
