    It's refreshing to see a recipe for sushi rice that does not include (ick sugar. I can't believe how many well-known (American chefs include it in their sushi rice! Unbelievable. Use quality rice and it will be sweet enough.

    Mirin is not always used in sushi rice, thus I wrote "almost." Purists (and most Japanese will prefer high quality rice with high quality vinegar. That's it.
