I liked the strong ginger taste. Tasted way better than store bought ginger ale and was a fun idea. I doubled the recipe and it lasts forever in the fridge.

I filled goblets with ice, poured syrup in the bottom, placed a mint garnish on the ice, and a lime wedge on the rim. I placed a small bottle of Pellegrino next to each setting for my gusts to pour. The presentation was very elegant, and the ale had an excellent gingery, spicy aroma and flavor. My guests were delighted to have been served homemade Ginger Ale. Thank you Ming. Adore you; love your show.

I used half the amount of ginger and made it just like he said. It's very very gingery, like spicy gingery. If I had blanched the ginger for a couple of minutes first, then proceeded with the recipe, I think I would have liked it better.

I wish that this recipe made more syrup, but it tastes great! It is a bit time comsuming to make but worth it!
