Most of the batter did not stick to the shrimp and what did wasn't flavorful. I tried Rachel Ray's recipe from her Thai episode and it worked out much better. I made the honey mustard dipping sauce from The Best of Show (do a search on Coconut shrimp and that was indeed delicious with this shrimp.

This batter is so crispy and light. I added my own sauce for dipping that made ti sweet and scrumptious. Mix together fresh squeezed orange juice water and corn starch and boil a minute or two until thickened. Place in a bowl and dip. YUMMY!
